How do I change the PHP timezone?

Our servers will be using the MST or GMT timezone, depending on the location of the server. 

However, you can change that by logging into cPanel, clicking on 'Select PHP version' and then clicking 'Show PHP Settings'.  

There will be a value for timezone on that screen which will give you the option to change it.
